Materials required:
- 6 tomatillos, rice
- 1 / 2 cup pineapple juice
- 1 / 4 cup vinegar
- 4 tablespoons fresh lime juice
- 1 fresh jalapeno pepper, seeded
- 1 clove garlic
- 2 teaspoons cumin
- 1 / 2 teaspoon dried oregano
- 3 ripe mangoes, peeled, and diced
- 1 / 2 large onion, chopped
- 1 green pepper, diced1 red bell pepper, diced
- Chopped coriander leaves, for garnish
- Mix all ingredients except the diced mango, onion, garlic and peppers into a food processor or blender and puree until it becomes mush.
- Arrange diced mango, onion, garlic and bell pepper cut into serving bowls and pour the mixture over the ingredients.
- Stir well, and holiday recipes ready to serve.
