Ingredent:
- 1 cup yellow cornmeal
- 1 cup apple, peeled and chopped
- 1 tablespoon honey
- 1 teaspoon salt
- 1 cup boiling water
- 1 / 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 egg
- 1 / 2 cup evaporate milk
- Maple syrup or applesauce
- Combine cornstarch, apple, honey and salt in medium bowl. Slowly stir in boiling water. Cover; let stand for 10 minutes.
- Stir in flour, baking powder and cinnamon just until blended.
- Combine eggs and evaporated milk in a small bowl, add the cornstarch mixture.
- Spoon the dough 1 / 3 cup for each pancake into the heated, oiled a little margarine in frying pan, cook for 1 minute or until bubbles appear. Play; continue to cook for 1 to 2 minutes or until golden. Repeat with remaining dough. Warm holiday recipes ready to be served with maple syrup.
